A moist and tender apple cake topped with a buttery cinnamon crumb topping, perfect for breakfast, brunch, or dessert.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 2 cups apples, peeled and diced
- 1/2 cup brown sugar
- 1/2 cup granulated sugar (for topping)
- 1 cup all-purpose flour (for topping)
- 1 teaspoon ground cinnamon (for topping)
- 1/2 cup unsalted butter, melted (for topping)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.
- Mix in sour cream until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the diced apples.
- Spread the batter evenly into the prepared baking dish.
- In another bowl, combine brown sugar, granulated sugar, flour, and cinnamon. Stir in melted butter until crumbly.
- Sprinkle the crumb topping evenly over the batter.
- Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
- Cool slightly before slicing and serving.
Notes
- Best served warm with coffee or tea.
- You can substitute sour cream with plain Greek yogurt.
- Try adding chopped nuts to the crumb topping for extra crunch.
