Description

Authentic Sicilian Pork Chops are juicy, pan-seared chops simmered in a rich tomato, olive, and caper sauce infused with garlic, herbs, and white wine — a rustic and flavorful Mediterranean dish straight from the heart of Sicily.


Ingredients

  • 4 bone-in pork chops (about 1 inch thick)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 can (400g / 14 oz) crushed tomatoes
  • 1/2 cup dry white wine
  • 1/4 cup sliced green olives
  • 2 tablespoons capers, drained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Lemon wedges, for serving


Instructions

  1. Pat pork chops dry and season generously with salt and black pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Sear pork chops for 3–4 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, add garlic and onion. Sauté until fragrant and translucent, about 2 minutes.
  4. Deglaze the pan with white wine, scraping up any browned bits from the bottom. Let simmer for 2 minutes.
  5. Add crushed tomatoes, olives, capers, oregano, and red pepper flakes. Stir well to combine.
  6. Return the pork chops to the skillet, nestling them into the sauce. Reduce heat to low, cover, and simmer for 20–25 minutes, or until the chops are tender and fully cooked (internal temperature 63°C / 145°F).
  7. Uncover and let the sauce thicken slightly for 5 more minutes.
  8. Garnish with fresh parsley and serve with lemon wedges for a burst of freshness.
  9. Pair with crusty bread, pasta, or roasted potatoes to soak up the flavorful sauce.

  • For a deeper flavor, marinate the pork chops in olive oil, garlic, and herbs for an hour before cooking.
