Description

Crispy avocado egg rolls filled with creamy avocado, melted cheese, and herbs, served with a bold, crave-worthy dipping sauce that goes with everything.


Ingredients

  • 2 ripe avocados, diced
  • 1/2 cup shredded mozzarella or Monterey Jack cheese
  • 1/4 cup chopped red onion
  • 2 tbsp chopped fresh cilantro
  • 1 tbsp lime juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 10 egg roll wrappers
  • Vegetable oil for frying
  • 1/2 cup ranch dressing
  • 2 tbsp sour cream
  • 1 tbsp lime juice (for dip)
  • 1 tbsp chopped cilantro (for dip)
  • 1/4 tsp garlic powder (for dip)


Instructions

  1. In a bowl, gently mix avocados, cheese, red onion, cilantro, lime juice, salt, and pepper.
  2. Place an egg roll wrapper on a flat surface with one corner facing you.
  3. Spoon avocado mixture into the center of the wrapper.
  4. Fold bottom corner over filling, fold in sides, and roll tightly, sealing edge with water.
  5. Repeat with remaining wrappers and filling.
  6. Heat oil in a deep skillet to 175°C (350°F).
  7. Fry egg rolls in batches for 2–3 minutes per side until golden brown.
  8. Remove and drain on paper towels.
  9. For the dip, whisk ranch dressing, sour cream, lime juice, cilantro, and garlic powder until smooth.
  10. Serve egg rolls hot with the dipping sauce.

Notes

  • Do not overfill wrappers to prevent bursting.
  • Egg rolls can be air-fried at 190°C (375°F) for 8–10 minutes.
  • Dip also pairs great with fries, tacos, or veggies.
