Description
Crispy avocado egg rolls filled with creamy avocado, melted cheese, and herbs, served with a bold, crave-worthy dipping sauce that goes with everything.
Ingredients
- 2 ripe avocados, diced
- 1/2 cup shredded mozzarella or Monterey Jack cheese
- 1/4 cup chopped red onion
- 2 tbsp chopped fresh cilantro
- 1 tbsp lime juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 10 egg roll wrappers
- Vegetable oil for frying
- 1/2 cup ranch dressing
- 2 tbsp sour cream
- 1 tbsp lime juice (for dip)
- 1 tbsp chopped cilantro (for dip)
- 1/4 tsp garlic powder (for dip)
Instructions
- In a bowl, gently mix avocados, cheese, red onion, cilantro, lime juice, salt, and pepper.
- Place an egg roll wrapper on a flat surface with one corner facing you.
- Spoon avocado mixture into the center of the wrapper.
- Fold bottom corner over filling, fold in sides, and roll tightly, sealing edge with water.
- Repeat with remaining wrappers and filling.
- Heat oil in a deep skillet to 175°C (350°F).
- Fry egg rolls in batches for 2–3 minutes per side until golden brown.
- Remove and drain on paper towels.
- For the dip, whisk ranch dressing, sour cream, lime juice, cilantro, and garlic powder until smooth.
- Serve egg rolls hot with the dipping sauce.
Notes
- Do not overfill wrappers to prevent bursting.
- Egg rolls can be air-fried at 190°C (375°F) for 8–10 minutes.
- Dip also pairs great with fries, tacos, or veggies.
