Description

Blackberry Pistachio Dream Bars are elegant dessert bars with a buttery shortbread crust, a creamy pistachio-studded filling, and a vibrant blackberry topping for a perfect balance of sweet, tart, and nutty flavors.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 tsp salt
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup blackberry preserves
  • 1 tsp vanilla extract
  • 1/2 cup shelled pistachios, chopped
  • 1 tbsp all-purpose flour (for filling)
  • Fresh blackberries for garnish (optional)


Instructions

  1. Preheat oven to 180°C (350°F) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix flour, powdered sugar, salt, and butter until crumbly.
  3. Press mixture firmly into the bottom of the pan to form the crust.
  4. Bake crust for 15 minutes until lightly golden.
  5. In another bowl, whisk eggs and granulated sugar until smooth.
  6. Stir in vanilla extract, blackberry preserves, and 1 tablespoon flour.
  7. Fold in chopped pistachios.
  8. Pour filling over warm crust and spread evenly.
  9. Bake for 25–30 minutes until set.
  10. Cool completely, then cut into bars and garnish with fresh blackberries if desired.

Notes

  • Let bars cool fully before slicing for clean edges.
  • You may substitute raspberry preserves for a different flavor.
