Blackberry Pistachio Dream Bars are elegant dessert bars with a buttery shortbread crust, a creamy pistachio-studded filling, and a vibrant blackberry topping for a perfect balance of sweet, tart, and nutty flavors.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/4 tsp salt
- 2 large eggs
- 3/4 cup granulated sugar
- 1/2 cup blackberry preserves
- 1 tsp vanilla extract
- 1/2 cup shelled pistachios, chopped
- 1 tbsp all-purpose flour (for filling)
- Fresh blackberries for garnish (optional)
Instructions
- Preheat oven to 180°C (350°F) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix flour, powdered sugar, salt, and butter until crumbly.
- Press mixture firmly into the bottom of the pan to form the crust.
- Bake crust for 15 minutes until lightly golden.
- In another bowl, whisk eggs and granulated sugar until smooth.
- Stir in vanilla extract, blackberry preserves, and 1 tablespoon flour.
- Fold in chopped pistachios.
- Pour filling over warm crust and spread evenly.
- Bake for 25–30 minutes until set.
- Cool completely, then cut into bars and garnish with fresh blackberries if desired.
Notes
- Let bars cool fully before slicing for clean edges.
- You may substitute raspberry preserves for a different flavor.
- Store refrigerated for up to 4 days.
