Ingredients
- 4 bone-in or boneless pork chops (about 1-inch thick)
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- For the Blackberry Sauce:
- 1 cup fresh or frozen blackberries
- 1/4 cup balsamic vinegar
- 2 tbsp honey or brown sugar
- 1/3 cup chicken broth
- 1 tsp Dijon mustard
- 1/2 tsp fresh thyme leaves (optional)
- 1 tbsp unsalted butter
- Salt and pepper, to taste
- Fresh blackberries and thyme sprigs for garnish (optional)
Instructions
- Prepare the Pork Chops: Pat pork chops dry with paper towels. Season both sides with salt, pepper, garlic powder, and smoked paprika.
- Heat olive oil in a large skillet over medium-high heat. Add pork chops and sear for 3–4 minutes per side, until golden brown and cooked through (internal temperature 145°F/63°C). Remove and set aside.
- Make the Blackberry Sauce: In the same skillet, reduce heat to medium and add blackberries, balsamic vinegar, honey, chicken broth, Dijon mustard, and thyme. Stir and bring to a simmer, mashing berries gently with a spoon.
- Cook for 6–8 minutes, until the sauce thickens slightly. Stir in butter to finish, then taste and adjust seasoning with salt and pepper.
- Combine: Return pork chops to the skillet and spoon the blackberry glaze over the top. Simmer for 1–2 minutes to coat evenly.
- Serve: Plate the pork chops with extra sauce drizzled on top and garnish with fresh thyme or blackberries. Serve with mashed potatoes, rice, or roasted vegetables.
