Ingredients
- 2 medium potatoes, diced
- 2 tablespoons olive oil
- 1/2 teaspoon paprika
- Salt and black pepper, to taste
- 4 large eggs
- 1 tablespoon butter
- 1/4 cup milk
- 1/2 cup shredded cheddar cheese
- 1/2 cup cherry tomatoes, halved
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/2 avocado, sliced
- 1 tablespoon chopped chives or green onions

Instructions
- Heat olive oil in a skillet over medium-high heat. Add diced potatoes, paprika, salt, and pepper. Cook for 8–10 minutes, stirring occasionally, until golden and crispy. Remove and set aside.
- In the same skillet, sauté bell peppers and onions for 3–4 minutes until slightly soft.
- In a bowl, whisk eggs with milk, salt, and pepper. Add butter to the skillet and pour in the eggs.
- Scramble gently over medium heat until fluffy and just set. Remove from heat.
- To assemble: divide crispy potatoes into bowls, top with scrambled eggs, sautéed veggies, and cherry tomatoes.
- Sprinkle with shredded cheese, top with avocado slices, and garnish with chives or green onions.
- Serve with hot sauce or salsa on the side for extra flavor.
