Ingredients
- 4 cups frozen or fresh breakfast potatoes
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cheese curds
- 1 cup cooked turkey sausage or beef sausage, crumbled
- 4 large eggs (for poaching)
- 2 egg yolks (for hollandaise)
- 1/2 cup unsalted butter, melted (for hollandaise)
- 1 tbsp lemon juice
- 1 tbsp warm water
- Pinch of paprika or cayenne (optional)
- Chopped chives (optional)
Instructions
- Preheat oven to 220°C (425°F).
- Toss potatoes with olive oil, salt, and black pepper.
- Spread on a baking sheet and roast 25–30 minutes until crispy and golden.
- Cook sausage in a skillet until browned; set aside.
- For hollandaise, whisk egg yolks and lemon juice over a double boiler until thickened.
- Slowly drizzle in melted butter while whisking until smooth.
- Add warm water as needed to thin sauce and season with paprika or cayenne.
- Poach eggs in simmering water for 3–4 minutes until whites are set.
- Place crispy potatoes on a serving platter.
- Top with cheese curds and warm sausage.
- Place poached eggs on top and drizzle generously with hollandaise sauce.
- Garnish with chopped chives and serve immediately.
