Breakfast Poutine with Hollandaise Sauce is a rich and indulgent morning dish featuring crispy breakfast potatoes topped with cheese curds, savory breakfast meat, poached eggs, and silky homemade hollandaise.


Ingredients

  • 4 cups frozen or fresh breakfast potatoes
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cheese curds
  • 1 cup cooked turkey sausage or beef sausage, crumbled
  • 4 large eggs (for poaching)
  • 2 egg yolks (for hollandaise)
  • 1/2 cup unsalted butter, melted (for hollandaise)
  • 1 tbsp lemon juice
  • 1 tbsp warm water
  • Pinch of paprika or cayenne (optional)
  • Chopped chives (optional)


Instructions

  1. Preheat oven to 220°C (425°F).
  2. Toss potatoes with olive oil, salt, and black pepper.
  3. Spread on a baking sheet and roast 25–30 minutes until crispy and golden.
  4. Cook sausage in a skillet until browned; set aside.
  5. For hollandaise, whisk egg yolks and lemon juice over a double boiler until thickened.
  6. Slowly drizzle in melted butter while whisking until smooth.
  7. Add warm water as needed to thin sauce and season with paprika or cayenne.
  8. Poach eggs in simmering water for 3–4 minutes until whites are set.
  9. Place crispy potatoes on a serving platter.
  10. Top with cheese curds and warm sausage.
  11. Place poached eggs on top and drizzle generously with hollandaise sauce.
  12. Garnish with chopped chives and serve immediately.
