Ingredients
- 300g rotini pasta
- 2 large chicken breasts, cut into bite-sized pieces
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 100g cream cheese, softened
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella
- Salt and black pepper to taste
- 1 tablespoon butter
- Fresh parsley or green onions, for garnish
Instructions
- Cook rotini pasta according to package instructions until al dente. Drain and set aside.
- In a bowl, toss the chicken pieces with Cajun seasoning until evenly coated.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 6–8 minutes until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, melt butter and sauté garlic and onions until fragrant and translucent.
- Reduce heat to medium and add heavy cream, chicken broth, and cream cheese. Stir until smooth and creamy.
- Stir in cheddar and mozzarella cheese until melted and the sauce becomes thick and cheesy.
- Add the cooked pasta and chicken to the skillet, tossing until everything is evenly coated in the sauce.
- Adjust seasoning with salt and pepper to taste.
- Garnish with chopped parsley or green onions and serve hot.
