Cheesy Cajun Garlic Chicken Rotini is a rich and creamy pasta dish loaded with tender Cajun-seasoned chicken, rotini noodles, garlic, and plenty of melted cheese — the perfect comfort food with a spicy kick.


Ingredients

  • 300g rotini pasta
  • 2 large chicken breasts, cut into bite-sized pieces
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 100g cream cheese, softened
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella
  • Salt and black pepper to taste
  • 1 tablespoon butter
  • Fresh parsley or green onions, for garnish


Instructions

  1. Cook rotini pasta according to package instructions until al dente. Drain and set aside.
  2. In a bowl, toss the chicken pieces with Cajun seasoning until evenly coated.
  3. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 6–8 minutes until golden brown and cooked through. Remove from skillet and set aside.
  4. In the same skillet, melt butter and sauté garlic and onions until fragrant and translucent.
  5. Reduce heat to medium and add heavy cream, chicken broth, and cream cheese. Stir until smooth and creamy.
  6. Stir in cheddar and mozzarella cheese until melted and the sauce becomes thick and cheesy.
  7. Add the cooked pasta and chicken to the skillet, tossing until everything is evenly coated in the sauce.
  8. Adjust seasoning with salt and pepper to taste.
  9. Garnish with chopped parsley or green onions and serve hot.
