Creamy and cheesy lasagna rolls filled with chicken, ricotta, and mozzarella, smothered in Alfredo sauce for a comforting and delicious dinner.
Ingredients
- 8 lasagna noodles
- 2 cups cooked chicken, shredded
- 1 1/2 cups ricotta cheese
- 1 cup shredded mozzarella cheese (plus extra for topping)
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 cups Alfredo sauce (store-bought or homemade)
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Cook lasagna noodles according to package instructions until al dente. Drain and lay flat on parchment paper to prevent sticking.
- In a large bowl, combine shredded chicken, ricotta, mozzarella, Parmesan, egg, garlic, Italian seasoning, salt, and pepper.
- Spread about 2 tablespoons of the chicken mixture evenly over each lasagna noodle.
- Roll up each noodle tightly and place seam-side down in the prepared baking dish.
- Pour Alfredo sauce evenly over the rolls and sprinkle with extra mozzarella.
- Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until bubbly and golden.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, mix spinach or broccoli into the filling.
- You can use rotisserie chicken for convenience.
- Pairs well with garlic bread and a green salad.
