Ingredients

  • 4 large flour tortillas
  • 3 cups diced potatoes
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • Salt and black pepper, to taste
  • 1 cup shredded cheddar or Mexican cheese blend
  • 1/2 cup black beans (optional)
  • 1/2 cup corn (optional)
  • 1/4 cup chopped cilantro (optional)


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced potatoes and cook until golden and tender, about 12–15 minutes.
  2. Add onion and cook until softened. Stir in garlic, cumin, smoked paprika, chili powder, salt, and pepper. Cook 1–2 minutes.
  3. If using black beans or corn, stir them in and heat through.
  4. Remove from heat and mix in shredded cheese until melted.
  5. Warm tortillas and spoon the cheesy potato mixture into the center of each.
  6. Fold sides in and roll into burritos.
  7. Optional: Place burritos seam side down in a skillet and toast until lightly crisp.
