Ingredients
- 3 medium potatoes, peeled and grated
- 1/2 small onion, grated
- 1/2 cup shredded cheddar cheese
- 2 tablespoons all-purpose flour
- 1 large egg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder (optional)
- 2 tablespoons chopped green onions (optional)
- 3 tablespoons vegetable oil (for frying)
- Sour cream or ketchup, for serving
Instructions
- Grate the potatoes and place them in a clean kitchen towel. Squeeze out as much moisture as possible.
- In a mixing bowl, combine grated potatoes, onion, cheese, flour, egg, salt, pepper, and garlic powder. Mix well until evenly combined.
- Heat vegetable oil in a large skillet over medium heat.
- Scoop about 2 tablespoons of the potato mixture for each pancake and flatten slightly in the pan.
- Fry for 3–4 minutes per side, or until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
- Repeat with remaining mixture, adding more oil as needed.
- Serve hot with sour cream, ketchup, or your favorite dipping sauce.
Notes
- For extra crispiness, make sure to remove as much water as possible from the grated potatoes.
- You can use mozzarella or pepper jack instead of cheddar for a different flavor.
- These pancakes can be made ahead and reheated in the oven or air fryer.
