Description
This Chicken Lasagna Soup has all the cozy comfort of lasagna in a bowl — tender chicken, creamy tomato broth, lasagna noodles, and gooey melted cheese. It’s hearty, flavorful, and perfect for chilly nights or weeknight dinners.
Ingredients
- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts (or thighs), diced
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 cups low-sodium chicken broth
- 2 cups marinara or tomato sauce
- 8 lasagna noodles, broken into pieces
- 1/2 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup heavy cream or half-and-half
- Fresh basil or parsley, chopped, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chicken and cook for 4–5 minutes until lightly browned and cooked through. Remove and set aside.
- In the same pot, add onion and sauté for 3 minutes until softened. Stir in garlic, Italian seasoning, red pepper flakes, salt, and black pepper. Cook for another minute until fragrant.
- Add chicken broth and marinara sauce. Bring to a simmer.
- Add broken lasagna noodles to the pot and cook uncovered for 10–12 minutes, stirring occasionally, until noodles are tender.
- Return cooked chicken to the pot and stir in heavy cream. Simmer for another 2–3 minutes to heat through.
- In a small bowl, mix ricotta, mozzarella, and Parmesan cheeses together.
- Ladle soup into bowls and top each serving with a generous spoonful of the cheese mixture. Garnish with fresh basil or parsley before serving.
Notes
- For a thicker soup, add an extra handful of noodles or reduce the broth slightly.
- Use rotisserie chicken to save time — just add it in the last few minutes of cooking.
- Make it spicy by adding a bit more red pepper flakes or hot sauce.
- Store leftovers in the fridge for up to 3 days. The soup will thicken as it sits — add a splash of broth when reheating.
