A rich and indulgent chocolate cake layered with sweet cherry filling and smooth cream, finished with a luscious chocolate topping—perfect for celebrations or special occasions.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup cocoa powder
  • 1 1/2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot water or brewed coffee
  • 1 1/2 cups cherry pie filling
  • 1 cup heavy whipping cream
  • 3 tablespoons powdered sugar
  • 115 g dark chocolate, melted


Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla extract; mix until smooth.
  4. Stir in hot water or coffee until the batter is thin and well combined.
  5. Divide batter evenly between prepared pans and bake for 30–35 minutes, until a toothpick inserted comes out clean.
  6. Cool cakes completely on a wire rack.
  7. Whip the heavy cream with powdered sugar until soft peaks form.
  8. Place one cake layer on a serving plate, spread cherry pie filling evenly, then top with whipped cream.
  9. Add the second cake layer and drizzle with melted dark chocolate.
  10. Chill for at least 30 minutes before slicing and serving.

Notes

  • Fresh or canned cherries can be used instead of pie filling.
  • Chilling the cake helps the layers set cleanly.
  • Chocolate shavings make a great garnish.
