Description

Chocolate Chip Brownie Bombs are decadent bite-sized treats made with fudgy brownie pieces rolled around chocolate chip cookie dough and coated in a rich chocolate shell.


Ingredients

  • 1 box brownie mix (plus ingredients required on package)
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour (heat treated)
  • 1/2 tsp salt
  • 1 cup mini chocolate chips
  • 12 oz semisweet chocolate (for coating)
  • 2 tbsp vegetable oil (for coating)


Instructions

  1. Prepare and bake brownies according to package directions. Allow to cool completely, then crumble into small pieces.
  2. In a mixing bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in milk and vanilla extract.
  4. Stir in flour, salt, and mini chocolate chips to make edible cookie dough.
  5. Scoop small portions of cookie dough and roll into bite-sized balls. Chill for 30 minutes.
  6. Take a portion of crumbled brownie and press it flat in your hand. Wrap it around a chilled cookie dough ball, rolling into a smooth ball.
  7. In a microwave-safe bowl, melt chocolate with oil in 30-second intervals until smooth.
  8. Dip each brownie bomb into melted chocolate and place on a parchment-lined tray.
  9. Chill in the refrigerator until set, about 30 minutes.
  10. Serve chilled or at room temperature.

Notes

  • For safety, heat treat flour before using in cookie dough by microwaving for 1 minute or baking at 350°F for 5 minutes.
  • Top with sprinkles or drizzle with white chocolate for decoration.
  • Store in an airtight container in the refrigerator for up to 5 days.
  • Can be frozen for up to 2 months.
