The Cowboy Club Sandwich is a hearty, flavor-packed triple-decker sandwich stacked with smoky bacon, grilled chicken, cheddar cheese, fresh veggies, and tangy BBQ mayo — the perfect fusion of classic comfort and bold cowboy-style flavor.
Ingredients

- 9 slices of thick-cut bread (toasted)
- 2 grilled chicken breasts, sliced
- 6 slices thick-cut bacon, cooked until crispy
- 4 slices cheddar cheese
- 2 medium tomatoes, sliced
- 1 cup lettuce or romaine leaves
- 1 small red onion, thinly sliced
- 1 avocado, sliced (optional)
For the BBQ Mayo:
- 1/4 cup mayonnaise
- 2 tablespoons BBQ sauce
- 1 teaspoon Dijon mustard
- 1/4 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together mayonnaise, BBQ sauce, Dijon mustard, smoked paprika, salt, and pepper until smooth. Set aside.
- Toast the bread slices until golden and crisp.
- Spread BBQ mayo on one side of each slice of toast.
- On the first slice, layer lettuce, tomato, chicken slices, and cheddar cheese.
- Top with the second slice of toast (BBQ mayo side down), then spread more BBQ mayo on top.
- Add bacon, red onion, and avocado slices (if using) on this layer.
- Top with the third slice of toast (BBQ mayo side down) to complete the stack.
- Secure the sandwich with toothpicks, then carefully cut it into quarters for serving.
- Serve immediately with fries, chips, or a side salad.
Notes
- For extra flavor, use Texas toast or thick sourdough bread.
- Grill the bread slightly after assembly to melt the cheese and warm the sandwich.
