A creamy and hearty slow cooker Cajun potato soup packed with tender potatoes, bold Cajun spices, and a rich, comforting texture perfect for cold days.


Ingredients

  • 2 lbs russet potatoes, peeled and diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 cups vegetable broth
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 1/2 teaspoons Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 2 green onions, sliced (for garnish)
  • Fresh parsley, chopped (optional)


Instructions

  1. Add diced potatoes, onion, garlic, vegetable broth, butter, Cajun seasoning, smoked paprika, salt, and black pepper to the slow cooker.
  2. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until potatoes are very tender.
  3. Use an immersion blender to partially blend the soup, leaving some chunks for texture.
  4. Stir in milk, heavy cream, and shredded cheddar cheese.
  5. Cover and cook on LOW for an additional 20–30 minutes until creamy and heated through.
  6. Taste and adjust seasoning if needed.
  7. Serve hot, garnished with green onions and parsley.

Notes

  • For extra heat, add a pinch of cayenne pepper.
