Description
Tender pan-seared salmon fillets simmered in a rich and creamy Tuscan-style sauce with sun-dried tomatoes, garlic, spinach, and parmesan for an elegant yet easy dinner.
Ingredients
- 4 salmon fillets (6 oz each)
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup chicken or vegetable broth
- 1/3 cup grated parmesan cheese
- 2 cups fresh spinach
- 1/2 tsp Italian seasoning
- 1/4 tsp red pepper flakes (optional)
Instructions
- Season salmon fillets with salt, pepper, and paprika.
- Heat olive oil in a large skillet over medium-high heat.
- Sear salmon 4–5 minutes per side until golden and just cooked through; remove and set aside.
- In the same skillet, reduce heat to medium and add garlic; sauté for 30 seconds.
- Add sun-dried tomatoes and cook for 1 minute.
- Pour in broth and heavy cream; stir to combine.
- Add parmesan cheese, Italian seasoning, and red pepper flakes; simmer until slightly thickened.
- Stir in spinach and cook until wilted.
- Return salmon to the skillet and spoon sauce over the top.
- Simmer 2–3 minutes, then serve warm.
Notes
- Do not overcook salmon to keep it moist.
- Serve with pasta, rice, or mashed potatoes.
- Sauce thickens as it cools.
