Description

Tender pan-seared salmon fillets simmered in a rich and creamy Tuscan-style sauce with sun-dried tomatoes, garlic, spinach, and parmesan for an elegant yet easy dinner.


Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/3 cup grated parmesan cheese
  • 2 cups fresh spinach
  • 1/2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)


Instructions

  1. Season salmon fillets with salt, pepper, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear salmon 4–5 minutes per side until golden and just cooked through; remove and set aside.
  4. In the same skillet, reduce heat to medium and add garlic; sauté for 30 seconds.
  5. Add sun-dried tomatoes and cook for 1 minute.
  6. Pour in broth and heavy cream; stir to combine.
  7. Add parmesan cheese, Italian seasoning, and red pepper flakes; simmer until slightly thickened.
  8. Stir in spinach and cook until wilted.
  9. Return salmon to the skillet and spoon sauce over the top.
  10. Simmer 2–3 minutes, then serve warm.

Notes

  • Do not overcook salmon to keep it moist.
  • Serve with pasta, rice, or mashed potatoes.
  • Sauce thickens as it cools.
