Description

Crispy Egg Salad is a creamy and flavorful twist on classic egg salad, featuring chopped hard-boiled eggs mixed with a tangy dressing and topped with crispy fried onions for added crunch.


Ingredients

  • 6 large eggs
  • 1/3 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup finely chopped celery
  • 2 tbsp chopped green onions
  • 1/3 cup crispy fried onions
  • 1 tbsp chopped fresh parsley (optional)


Instructions

  1. Place eggs in a pot, cover with water, and bring to a boil.
  2. Turn off heat, cover, and let sit for 10–12 minutes.
  3. Transfer eggs to ice water, cool completely, then peel.
  4. Chop eggs into small pieces.
  5. In a bowl, mix mayonnaise, Dijon mustard, lemon juice, salt, and black pepper.
  6. Fold in chopped eggs, celery, and green onions.
  7. Gently stir in half of the crispy fried onions.
  8. Top with remaining crispy onions and parsley before serving.
  9. Serve chilled or at room temperature.

  • Add a pinch of paprika for extra flavor.
  • Serve on toast, croissants, or lettuce wraps.
