Description
Crispy Egg Salad is a creamy and flavorful twist on classic egg salad, featuring chopped hard-boiled eggs mixed with a tangy dressing and topped with crispy fried onions for added crunch.
Ingredients
- 6 large eggs
- 1/3 cup mayonnaise
- 1 tsp Dijon mustard
- 1 tbsp lemon juice
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup finely chopped celery
- 2 tbsp chopped green onions
- 1/3 cup crispy fried onions
- 1 tbsp chopped fresh parsley (optional)
Instructions
- Place eggs in a pot, cover with water, and bring to a boil.
- Turn off heat, cover, and let sit for 10–12 minutes.
- Transfer eggs to ice water, cool completely, then peel.
- Chop eggs into small pieces.
- In a bowl, mix mayonnaise, Dijon mustard, lemon juice, salt, and black pepper.
- Fold in chopped eggs, celery, and green onions.
- Gently stir in half of the crispy fried onions.
- Top with remaining crispy onions and parsley before serving.
- Serve chilled or at room temperature.
Notes
- Add a pinch of paprika for extra flavor.
- Serve on toast, croissants, or lettuce wraps.
- Store refrigerated for up to 3 days.
