Ingredients

  • 4 cups frozen hash browns
  • 2 tbsp olive oil or butter
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup breakfast sausage or bacon, cooked and crumbled
  • 2 tbsp milk
  • 2 tbsp chopped green onions
  • Hot sauce or ketchup for serving (optional)


Instructions

  1. Preheat oven to 220°C (425°F) and line a baking sheet with parchment paper.
  2. Toss hash browns with olive oil, salt, and black pepper.
  3. Spread hash browns in an even layer and bake for 25–30 minutes, flipping halfway, until crispy.
  4. While hash browns cook, whisk eggs with milk and a pinch of salt.
  5. Scramble eggs in a nonstick skillet over medium heat until just set.
  6. Divide crispy hash browns into serving bowls.
  7. Top with scrambled eggs, cooked sausage or bacon, and shredded cheese.
  8. Garnish with green onions and add hot sauce if desired.
