Ingredients
- 4 cups frozen hash browns
- 2 tbsp olive oil or butter
- 1/2 tsp salt
- 1/2 tsp black pepper
- 4 large eggs
- 1/2 cup shredded cheddar cheese
- 1/2 cup breakfast sausage or bacon, cooked and crumbled
- 2 tbsp milk
- 2 tbsp chopped green onions
- Hot sauce or ketchup for serving (optional)
Instructions
- Preheat oven to 220°C (425°F) and line a baking sheet with parchment paper.
- Toss hash browns with olive oil, salt, and black pepper.
- Spread hash browns in an even layer and bake for 25–30 minutes, flipping halfway, until crispy.
- While hash browns cook, whisk eggs with milk and a pinch of salt.
- Scramble eggs in a nonstick skillet over medium heat until just set.
- Divide crispy hash browns into serving bowls.
- Top with scrambled eggs, cooked sausage or bacon, and shredded cheese.
- Garnish with green onions and add hot sauce if desired.
- Serve immediately.
