Description

Crockpot Hamburger Potato Casserole is a hearty, comforting dish made with layers of seasoned ground beef, tender potatoes, onions, and a creamy cheese sauce — an easy, family-friendly slow cooker meal perfect for busy weeknights.


Ingredients

  • 1 lb (450g) ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 6 medium potatoes, peeled and thinly sliced
  • 1 can (10.5 oz / 295g) cream of mushroom soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese (plus more for topping)
  • 1/2 teaspoon dried parsley (optional)
  • Olive oil or butter, for cooking


Instructions

  1. In a skillet over medium heat, cook ground beef with diced onion and garlic until the meat is browned and onions are softened. Drain excess fat.
  2. Season the cooked beef with salt, pepper, and paprika. Set aside.
  3. In a small bowl, mix the cream of mushroom soup with milk and 1 cup shredded cheddar cheese until well combined.
  4. Grease the inside of the slow cooker lightly with oil or nonstick spray.
  5. Layer half of the sliced potatoes on the bottom of the crockpot, followed by half of the beef mixture, then half of the creamy soup mixture. Repeat the layers once more.
  6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender.
  7. During the last 15 minutes of cooking, sprinkle additional cheddar cheese on top, cover, and let melt.
  8. Garnish with dried parsley or green onions before serving.

Notes

  • You can substitute cream of mushroom soup with cream of chicken or cheddar soup for a flavor twist.
  • Add frozen mixed vegetables or sliced carrots for extra nutrition.
  • Leftovers reheat beautifully and can also be baked in the oven for a crispy top layer.
