Ingredients
- 2 cups cooked shredded chicken
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup chicken broth
- 1/2 cup sour cream
- 1/2 cup shredded Monterey Jack cheese
- 8 small flour or corn tortillas
- Fresh cilantro and lime wedges (optional)
Instructions
- Heat olive oil in a pot over medium heat.
- Sauté onion and garlic until softened.
- Add shredded chicken, white beans, and green chilies.
- Stir in cumin, chili powder, oregano, salt, and black pepper.
- Pour in chicken broth and simmer for 10–12 minutes.
- Reduce heat and stir in sour cream and shredded cheese until creamy.
- Warm tortillas in a skillet or microwave.
- Spoon white chicken chili mixture into tortillas.
- Garnish with cilantro and a squeeze of lime if desired.
- Serve immediately.
