Ingredients

  • 2 cups cooked shredded chicken
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • 1/2 cup shredded Monterey Jack cheese
  • 8 small flour or corn tortillas
  • Fresh cilantro and lime wedges (optional)


Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Sauté onion and garlic until softened.
  3. Add shredded chicken, white beans, and green chilies.
  4. Stir in cumin, chili powder, oregano, salt, and black pepper.
  5. Pour in chicken broth and simmer for 10–12 minutes.
  6. Reduce heat and stir in sour cream and shredded cheese until creamy.
  7. Warm tortillas in a skillet or microwave.
