Ingredients

  • 4 salmon fillets
  • 1 cup pomegranate juice
  • 1/2 cup fresh orange juice
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tsp orange zest
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • Pomegranate arils, for garnish
  • Fresh parsley or rosemary, for garnish


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  2. Season salmon with salt and pepper, then drizzle with olive oil.
  3. In a saucepan, combine pomegranate juice, orange juice, honey, soy sauce, garlic, and orange zest. Simmer 8–10 minutes until reduced to a syrupy glaze.
  4. Brush salmon generously with the glaze.
  5. Bake salmon for 12–15 minutes, brushing with additional glaze halfway through.
  6. Optional: Broil for 1–2 minutes for caramelized edges.
  7. Drizzle remaining glaze over the cooked salmon. Garnish with pomegranate arils and fresh herbs.
