Description

A quick and healthy broccoli pasta made with tender broccoli, garlic, olive oil, and Parmesan — a simple yet satisfying meal perfect for busy weeknights.


Ingredients

  • 250g whole wheat or regular pasta
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Juice of 1/2 lemon
  • 1/4 cup pasta water (reserved)
  • Fresh parsley for garnish (optional)


Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package directions.
  2. In the last 3 minutes of pasta cooking, add broccoli florets to the same pot.
  3. Reserve 1/4 cup of the pasta water, then drain pasta and broccoli together.
  4. In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes; sauté for 30 seconds until fragrant.
  5. Add the cooked pasta and broccoli to the skillet. Toss to coat.
  6. Pour in the reserved pasta water, then add lemon juice and Parmesan cheese. Toss until everything is well combined and creamy.
  7. Season with salt and pepper to taste.
  8. Serve warm, garnished with extra Parmesan and fresh parsley if desired.

  • For a protein boost, add grilled chicken, shrimp, or chickpeas.
  • Replace Parmesan with nutritional yeast for a vegan option.
