Description

This Effortless Savory French Onion Potato Bake is a creamy, cheesy side dish layered with tender potatoes, caramelized onions, and a rich French onion-inspired sauce — the perfect comfort food for any meal or gathering.

Ingredients

  • 2 lbs russet or Yukon gold potatoes, thinly sliced
  • 2 tbsp butter
  • 2 large onions, thinly sliced
  • 1 tbsp olive oil
  • 1 can (10.5 oz) condensed French onion soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 1/2 cups shredded Gruyère or Swiss cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • 1 tsp dried thyme (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet, heat butter and olive oil over medium heat. Add sliced onions and cook slowly, stirring often, until caramelized and golden brown, about 15–20 minutes.
  3. In a bowl, whisk together French onion soup, sour cream, and milk until smooth. Add thyme if desired.
  4. Layer half of the potato slices in the prepared baking dish. Season lightly with salt and pepper.
  5. Spread half of the caramelized onions and half of the sauce mixture over the potatoes. Sprinkle with half of the Gruyère cheese.
  6. Repeat with the remaining potatoes, onions, sauce, and cheese layers. Top with grated Parmesan cheese.
  7. Cover with foil and bake for 40 minutes. Remove foil and bake an additional 15–20 minutes, until golden and bubbly.
  8. Let rest for 10 minutes before serving. Garnish with chopped parsley.

Notes

  • Use a mandoline for evenly sliced potatoes.
  • For a richer flavor, mix in 1/4 cup caramelized onions into the sauce before layering.
  • Substitute Gruyère with mozzarella or provolone for a milder cheese flavor.
  • This dish pairs beautifully with roast chicken, steak, or holiday ham.
