This Effortless Savory French Onion Potato Bake is a creamy, cheesy side dish layered with tender potatoes, caramelized onions, and a rich French onion-inspired sauce — the perfect comfort food for any meal or gathering.
Ingredients
- 2 lbs russet or Yukon gold potatoes, thinly sliced
- 2 tbsp butter
- 2 large onions, thinly sliced
- 1 tbsp olive oil
- 1 can (10.5 oz) condensed French onion soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1 1/2 cups shredded Gruyère or Swiss cheese
- 1/4 cup grated Parmesan cheese
- Salt and black pepper, to taste
- 1 tsp dried thyme (optional)
- Fresh parsley, chopped, for garnish
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a large skillet, heat butter and olive oil over medium heat. Add sliced onions and cook slowly, stirring often, until caramelized and golden brown, about 15–20 minutes.
- In a bowl, whisk together French onion soup, sour cream, and milk until smooth. Add thyme if desired.
- Layer half of the potato slices in the prepared baking dish. Season lightly with salt and pepper.
- Spread half of the caramelized onions and half of the sauce mixture over the potatoes. Sprinkle with half of the Gruyère cheese.
- Repeat with the remaining potatoes, onions, sauce, and cheese layers. Top with grated Parmesan cheese.
- Cover with foil and bake for 40 minutes. Remove foil and bake an additional 15–20 minutes, until golden and bubbly.
- Let rest for 10 minutes before serving. Garnish with chopped parsley.
