Description

A cozy fall-inspired stew made with tender meat and vegetables simmered in apple cider, served over creamy mashed potatoes for a comforting seasonal meal.


Ingredients

  • 1.5 lbs beef chuck, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 cup apple cider (not vinegar)
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 lbs potatoes, peeled and cubed
  • 1/2 cup whole milk
  • 3 tablespoons butter


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef and brown on all sides, then remove and set aside.
  3. In the same pot, add onion, carrots, and celery; cook until softened.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Stir in tomato paste, thyme, rosemary, cinnamon, salt, and pepper.
  6. Return beef to the pot and pour in apple cider and beef broth.
  7. Bring to a simmer, cover, and cook on low for 1.5–2 hours until beef is tender.
  8. Meanwhile, boil potatoes in salted water until fork-tender, about 15 minutes.
  9. Drain potatoes and mash with butter and milk until smooth.
  10. Adjust seasoning on stew and mash as needed.
  11. Serve the apple cider stew over a generous scoop of mashed potatoes.
