Description
Firecracker Smoked Bacon Triple-Cheese Meatloaf is a bold, flavor-packed comfort dish made with smoky bacon, three kinds of melted cheese, and a sweet-spicy firecracker glaze baked to juicy perfection.
Ingredients
- 1 1/2 lb ground beef
- 6 slices smoked bacon, chopped
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded pepper jack cheese
- 3/4 cup breadcrumbs
- 2 large eggs
- 1/2 cup milk
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/2 cup ketchup
- 1/4 cup sweet chili sauce
- 2 tbsp brown sugar
- 1 tbsp hot sauce
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a loaf pan.
- In a skillet, cook chopped bacon until just starting to crisp; drain excess grease.
- In a large bowl, combine ground beef, bacon, cheddar, mozzarella, pepper jack, breadcrumbs, eggs, milk, onion, garlic, paprika, salt, and pepper.
- Mix gently until just combined.
- Transfer mixture into the prepared loaf pan and shape evenly.
- In a small bowl, mix ketchup, sweet chili sauce, brown sugar, and hot sauce.
- Spread half of the glaze over the meatloaf.
- Bake uncovered for 40 minutes.
- Remove from oven, spread remaining glaze on top, and return to oven.
- Bake an additional 15–20 minutes until internal temperature reaches 160°F (71°C).
- Rest for 10 minutes before slicing and serving.
Notes
- Do not overmix to keep meatloaf tender.
- Adjust hot sauce to control heat level.
- Leftovers make excellent sandwiches.
