Description

Firecracker Smoked Bacon Triple-Cheese Meatloaf is a bold, flavor-packed comfort dish made with smoky bacon, three kinds of melted cheese, and a sweet-spicy firecracker glaze baked to juicy perfection.


Ingredients

  • 1 1/2 lb ground beef
  • 6 slices smoked bacon, chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded pepper jack cheese
  • 3/4 cup breadcrumbs
  • 2 large eggs
  • 1/2 cup milk
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 cup ketchup
  • 1/4 cup sweet chili sauce
  • 2 tbsp brown sugar
  • 1 tbsp hot sauce


Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a loaf pan.
  2. In a skillet, cook chopped bacon until just starting to crisp; drain excess grease.
  3. In a large bowl, combine ground beef, bacon, cheddar, mozzarella, pepper jack, breadcrumbs, eggs, milk, onion, garlic, paprika, salt, and pepper.
  4. Mix gently until just combined.
  5. Transfer mixture into the prepared loaf pan and shape evenly.
  6. In a small bowl, mix ketchup, sweet chili sauce, brown sugar, and hot sauce.
  7. Spread half of the glaze over the meatloaf.
  8. Bake uncovered for 40 minutes.
  9. Remove from oven, spread remaining glaze on top, and return to oven.
  10. Bake an additional 15–20 minutes until internal temperature reaches 160°F (71°C).
  11. Rest for 10 minutes before slicing and serving.

Notes

  • Do not overmix to keep meatloaf tender.
  • Adjust hot sauce to control heat level.
  • Leftovers make excellent sandwiches.
