Ingredients

  • 1 lb fresh button or cremini mushrooms, cleaned and sliced
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1 cup buttermilk (or milk with 1 tsp vinegar)
  • 2 eggs, beaten
  • 2 cups panko breadcrumbs (or regular breadcrumbs)
  • Vegetable oil, for frying
  • 1 cup ranch dressing, for dipping
  • Fresh parsley or chives, for garnish (optional)


Instructions

  1. Clean mushrooms with a damp paper towel and slice into 1/4-inch thick pieces. Pat dry thoroughly.
  2. Set up three bowls: one with flour mixed with cornstarch, garlic powder, onion powder, paprika, salt, and pepper; the second with beaten eggs and buttermilk; and the third with panko breadcrumbs.
  3. Dip mushroom slices first in the flour mixture, then in the egg mixture, and finally coat with breadcrumbs. Press gently to ensure crumbs stick well.
  4. Heat 1 inch of oil in a deep skillet or Dutch oven over medium-high heat (350°F / 175°C).
  5. Fry mushrooms in batches for 2–3 minutes per side, until golden brown and crisp. Avoid overcrowding the pan.
  6. Transfer to a paper towel-lined plate to drain excess oil.
  7. Sprinkle with a little salt while still hot for extra flavor.
  8. Serve immediately with chilled ranch dressing for dipping, garnished with chopped parsley or chives if desired.
