Ingredients
-
- 1/2 cup (115g) unsalted butter
- 170g (6 oz) dark chocolate, chopped
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons brewed espresso or strong coffee
- 3/4 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/4 teaspoon salt
For the Coffee Frosting:
- 1/2 cup (115g) unsalted butter, softened
- 1 1/2 cups powdered sugar
- 2 tablespoons brewed coffee (cooled)
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 175°C (350°F) and line an 8×8-inch baking pan with parchment paper.
- In a saucepan over low heat, melt butter and chocolate together, stirring until smooth. Remove from heat and let cool slightly.
- Whisk in both sugars, eggs, vanilla, and espresso until glossy and combined.
- In a separate bowl, whisk together flour, cocoa powder, and salt. Add to the chocolate mixture and stir until just combined — do not overmix.
- Pour batter into the prepared pan and smooth the top. Bake for 22–25 minutes or until a toothpick inserted in the center comes out with moist crumbs.
- Let brownies cool completely before frosting.
- To make the frosting: beat softened butter until creamy. Gradually add powdered sugar, mixing well between additions.
- Add coffee, vanilla, and a pinch of salt, beating until light and fluffy.
- Spread the frosting evenly over cooled brownies, then cut into squares.
- Optional: dust with cocoa powder or drizzle with melted chocolate before serving.
Notes
- Use instant espresso powder for a stronger coffee flavor.
- Chill the frosted brownies for a firmer texture and cleaner cuts.
- Store in an airtight container in the fridge for up to 5 days.
