Ingredients
- 2 ribeye or New York strip steaks (about 1-inch thick)
- 2 tbsp olive oil
- 2 tsp salt
- 1 tsp freshly ground black pepper
- 4 tbsp unsalted butter
- 4 cloves garlic, smashed
- 2 sprigs fresh rosemary or thyme
- 1 tbsp chopped parsley (for garnish)
- Optional: pinch of red pepper flakes or a squeeze of lemon juice for brightness
Instructions
- Remove steaks from the refrigerator and let them sit at room temperature for 30 minutes before cooking. Pat dry with paper towels.
- Season both sides generously with salt and pepper.
- Heat a large cast-iron skillet over high heat until very hot. Add olive oil and swirl to coat.
- Place steaks in the skillet and sear without moving for 2–3 minutes, until a deep brown crust forms. Flip and sear the other side for another 2–3 minutes.
