Description

Soft and spiced gingerbread cheesecake cookies with a creamy cheesecake center, combining classic holiday flavors in one irresistible cookie.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract (for filling)


Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and cloves.
  3. In another bowl, cream butter and brown sugar until light and fluffy.
  4. Mix in molasses, egg, and vanilla extract.
  5. Gradually add dry ingredients to the wet mixture until combined.
  6. In a separate bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
  7. Scoop gingerbread dough and flatten slightly in your hand.
  8. Add a small spoonful of cheesecake filling to the center and wrap dough around it.
  9. Place cookies on baking sheets, spaced apart.
  10. Bake for 11–13 minutes until set.
  11. Cool on baking sheet for 5 minutes, then transfer to a wire rack.

Notes

  • Chill dough for 30 minutes if it feels too soft.
  • Do not overfill with cheesecake to prevent leaking.
  • Store cookies in the refrigerator due to the cream cheese filling.
