Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/2 cups brown sugar, packed
  • 3 large eggs
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp instant coffee granules (dissolved in 1/4 cup hot water)
  • 1/2 cup whole milk
  • 1/2 cup caramel sauce (plus extra for drizzling)
  • 1 cup powdered sugar (for glaze)
  • 23 tbsp strong brewed coffee (for glaze)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking dish or round cake pan.
  2. In a large bowl, cream butter and brown sugar until light and fluffy.
  3. Beat in eggs one at a time until combined.
  4. In a separate bowl, whisk flour, baking powder, and salt.
  5. Gradually add dry ingredients to wet mixture, alternating with milk and dissolved coffee, mixing until smooth.
  6. Pour half the batter into the prepared pan, drizzle with caramel sauce, then top with remaining batter. Swirl gently with a knife for a marbled effect.
  7. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
  8. Cool slightly, then drizzle extra caramel sauce over the cake.
  9. For glaze: whisk powdered sugar with brewed coffee until smooth. Drizzle over cooled cake before serving.
