Ingredients

  • 1 lb kielbasa sausage, cut into 4 sandwich-length pieces
  • 1 tbsp olive oil
  • 2 large sweet onions, thinly sliced
  • 1 tbsp butter
  • 1 tsp brown sugar
  • 1 tbsp Dijon mustard
  • 4 hoagie rolls or brat buns
  • 4 slices provolone or Swiss cheese
  • 1/4 cup mayonnaise (optional)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)


Instructions

  1. Preheat grill to medium-high heat.
  2. In a skillet over medium heat, melt butter and olive oil. Add sliced onions and cook slowly until golden brown and caramelized, about 15–20 minutes. Stir in brown sugar and a pinch of salt for extra sweetness.
  3. Grill kielbasa sausages for 5–6 minutes per side, until nicely browned and heated through.
  4. During the last minute of grilling, place a slice of cheese on each sausage to melt slightly.
  5. Toast hoagie rolls on the grill for 1–2 minutes, cut side down, until lightly crisp.
  6. Spread Dijon mustard or mayonnaise on each bun (optional), then layer with caramelized onions and grilled kielbasa.
