Ingredients
- For the Chicken:
- 4 boneless skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Juice of 1 lime
- For Topping:
- 1 cup salsa verde (store-bought or homemade)
- 4–6 slices pepper jack cheese
- Fresh cilantro, chopped
- Lime wedges
Instructions
- Marinate the Chicken: In a bowl, combine olive oil, garlic powder, onion powder, cumin, chili powder, salt, pepper, and lime juice. Coat chicken breasts evenly and let marinate for at least 20 minutes (up to 4 hours).

- Serve: Plate the chicken and spoon extra salsa verde on top. Garnish with cilantro and serve with lime wedges.
Notes
- For extra heat, use habanero jack or add sliced jalapeños on top.
- Great served with rice, grilled veggies, tortillas, or on top of a salad.
- Can also be cooked in a skillet or baked at 400°F for 20–25 minutes.
