Ingredients

  • 4 ribeye or sirloin steaks (8 oz / 225 g each)
  • 2 tbsp olive oil
  • 2 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 2 tbsp unsalted butter
  • 2 cloves garlic, smashed
  • 2 sprigs fresh rosemary or thyme
  • 4 cups baby potatoes, halved
  • 1 tbsp olive oil (for potatoes)
  • 1/2 tsp salt (for potatoes)
  • 1/2 tsp black pepper (for potatoes)
  • 1 cup steamed green beans or grilled vegetables


Instructions

  1. Remove steaks from refrigerator 30 minutes before grilling.
  2. Preheat grill to high heat.
  3. Rub steaks with olive oil, salt, pepper, garlic powder, and smoked paprika.
  4. Grill steaks for 4–5 minutes per side for medium-rare, adjusting for desired doneness.
  5. During the last minute, add butter, garlic, and herbs to the grill or pan and baste steaks.
  6. Remove steaks and let rest for 5–10 minutes.
  7. Meanwhile, toss potatoes with olive oil, salt, and pepper.
  8. Roast potatoes at 220°C (425°F) for 30–35 minutes or grill in a grill basket until golden.
  9. Serve steaks with roasted potatoes and green beans or grilled vegetables.

Notes

  • Use a meat thermometer for accuracy (54°C / 130°F for medium-rare).
  • Letting steak rest keeps it juicy.
  • Finish with flaky sea salt for extra flavor.
