Description

This Chicken Lasagna Soup has all the cozy comfort of lasagna in a bowl — tender chicken, creamy tomato broth, lasagna noodles, and gooey melted cheese. It’s hearty, flavorful, and perfect for chilly nights or weeknight dinners.


Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts (or thighs), diced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 cups low-sodium chicken broth
  • 2 cups marinara or tomato sauce
  • 8 lasagna noodles, broken into pieces
  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup heavy cream or half-and-half
  • Fresh basil or parsley, chopped, for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken and cook for 4–5 minutes until lightly browned and cooked through. Remove and set aside.
  2. In the same pot, add onion and sauté for 3 minutes until softened. Stir in garlic, Italian seasoning, red pepper flakes, salt, and black pepper. Cook for another minute until fragrant.
  3. Add chicken broth and marinara sauce. Bring to a simmer.
  4. Add broken lasagna noodles to the pot and cook uncovered for 10–12 minutes, stirring occasionally, until noodles are tender.
  5. Return cooked chicken to the pot and stir in heavy cream. Simmer for another 2–3 minutes to heat through.
  6. In a small bowl, mix ricotta, mozzarella, and Parmesan cheeses together.
  7. Ladle soup into bowls and top each serving with a generous spoonful of the cheese mixture. Garnish with fresh basil or parsley before serving.

Notes

  • For a thicker soup, add an extra handful of noodles or reduce the broth slightly.
  • Use rotisserie chicken to save time — just add it in the last few minutes of cooking.
  • Make it spicy by adding a bit more red pepper flakes or hot sauce.
  • Store leftovers in the fridge for up to 3 days. The soup will thicken as it sits — add a splash of broth when reheating.
