Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • Salt and black pepper, to taste
  • 1/3 cup chicken broth or water
  • 1 cup spinach or kale, chopped
  • 1/4 cup shredded cheese (optional)
  • Fresh parsley or cilantro, for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced sweet potatoes and cook 8–10 minutes until they begin to soften.
  2. Add onion and bell pepper; sauté until softened.
  3. Stir in garlic and cook 1 minute until fragrant.
  4. Add ground turkey, breaking it apart as it cooks. Season with smoked paprika, cumin, chili powder, salt, and pepper.
  5. Pour in chicken broth or water, cover, and simmer 5–7 minutes until sweet potatoes are tender and turkey is cooked through.
  6. Stir in spinach or kale until wilted.
  7. Top with shredded cheese if using, cover until melted.
  8. Garnish with parsley or cilantro and serve warm.
