Description
A hearty and flavorful dish made with roasted sweet potatoes, savory sausage, and a sweet honey garlic glaze, perfect for a quick weeknight dinner.
Ingredients
- 2 large sweet potatoes, peeled and cubed
- 1 lb smoked sausage, sliced into rounds
- 2 tbsp olive oil
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss sweet potato cubes with olive oil, paprika, salt, and black pepper. Spread evenly on the baking sheet.
- Roast for 20 minutes, stirring halfway through.
- Add sliced sausage to the baking sheet and roast for another 15–20 minutes, until sweet potatoes are tender and sausage is slightly caramelized.
- In a small saucepan, combine honey, garlic, and soy sauce. Simmer for 2–3 minutes until slightly thickened.
- Drizzle honey garlic sauce over roasted sausage and sweet potatoes, tossing to coat.
- Garnish with fresh parsley and serve warm.
Notes
- Use chicken sausage or turkey sausage for a lighter version.
- Add bell peppers or Brussels sprouts for extra veggies.
- Leftovers can be stored in the fridge for up to 3 days.
