Description

A hearty and flavorful dish made with roasted sweet potatoes, savory sausage, and a sweet honey garlic glaze, perfect for a quick weeknight dinner.


Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 lb smoked sausage, sliced into rounds
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss sweet potato cubes with olive oil, paprika, salt, and black pepper. Spread evenly on the baking sheet.
  3. Roast for 20 minutes, stirring halfway through.
  4. Add sliced sausage to the baking sheet and roast for another 15–20 minutes, until sweet potatoes are tender and sausage is slightly caramelized.
  5. In a small saucepan, combine honey, garlic, and soy sauce. Simmer for 2–3 minutes until slightly thickened.
  6. Drizzle honey garlic sauce over roasted sausage and sweet potatoes, tossing to coat.
  7. Garnish with fresh parsley and serve warm.

  • Use chicken sausage or turkey sausage for a lighter version.
  • Add bell peppers or Brussels sprouts for extra veggies.
