This Hot Smoked Gouda Bacon Dip is a creamy, smoky, and indulgent appetizer that combines melted smoked Gouda cheese, crispy bacon, and a touch of garlic — baked until bubbly and golden for the ultimate crowd-pleasing party dip.
Ingredients
- 8 oz smoked Gouda cheese, shredded
- 4 oz cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 6 slices bacon, cooked and crumbled
- 2 green onions, chopped
- 1 clove garlic, minced
- 1/4 tsp smoked paprika
- 1/4 tsp black pepper
- Salt, to taste
- 2 tbsp grated Parmesan cheese (optional, for topping)
- Crackers, baguette slices, or veggies, for serving
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a small baking dish or oven-safe skillet.
- In a medium bowl, combine cream cheese, sour cream, and mayonnaise. Mix until smooth and creamy.
- Stir in shredded smoked Gouda, crumbled bacon (reserve a little for topping), garlic, green onions, smoked paprika, black pepper, and salt.
- Spoon mixture into the prepared baking dish and spread evenly. Sprinkle with Parmesan cheese and remaining bacon on top.
- Bake for 20–25 minutes, or until hot and bubbly with a lightly golden top.
- Remove from oven and let rest for 5 minutes before serving.
- Serve warm with crackers, toasted baguette slices, or raw veggies for dipping.
Notes
- For extra smokiness, use double-smoked bacon or add a pinch of chipotle powder.
- Make ahead: assemble the dip, refrigerate, then bake just before serving.
- Substitute smoked cheddar or fontina if you can’t find smoked Gouda.
