Description

This Hot Smoked Gouda Bacon Dip is a creamy, smoky, and indulgent appetizer that combines melted smoked Gouda cheese, crispy bacon, and a touch of garlic — baked until bubbly and golden for the ultimate crowd-pleasing party dip.

Ingredients

  • 8 oz smoked Gouda cheese, shredded
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 6 slices bacon, cooked and crumbled
  • 2 green onions, chopped
  • 1 clove garlic, minced
  • 1/4 tsp smoked paprika
  • 1/4 tsp black pepper
  • Salt, to taste
  • 2 tbsp grated Parmesan cheese (optional, for topping)
  • Crackers, baguette slices, or veggies, for serving

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a small baking dish or oven-safe skillet.
  2. In a medium bowl, combine cream cheese, sour cream, and mayonnaise. Mix until smooth and creamy.
  3. Stir in shredded smoked Gouda, crumbled bacon (reserve a little for topping), garlic, green onions, smoked paprika, black pepper, and salt.
  4. Spoon mixture into the prepared baking dish and spread evenly. Sprinkle with Parmesan cheese and remaining bacon on top.
  5. Bake for 20–25 minutes, or until hot and bubbly with a lightly golden top.
  6. Remove from oven and let rest for 5 minutes before serving.
  7. Serve warm with crackers, toasted baguette slices, or raw veggies for dipping.

Notes

  • For extra smokiness, use double-smoked bacon or add a pinch of chipotle powder.
  • Make ahead: assemble the dip, refrigerate, then bake just before serving.
  • Substitute smoked cheddar or fontina if you can’t find smoked Gouda.
  • Perfect for holidays, game days, or any gathering where comfort food is welcome.
