Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 3 large egg yolks
  • 1/4 cup granulated sugar (for custard)
  • 1 tablespoon cornstarch
  • Extra granulated sugar (for brûlée topping)


Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Cream butter and sugar until light and fluffy.
  4. Beat in egg and vanilla extract.
  5. Gradually mix in dry ingredients until combined.
  6. Scoop dough onto baking sheets and flatten slightly.
  7. Bake for 10–12 minutes until edges are set. Cool completely.
  8. For the custard, whisk egg yolks, sugar, and cornstarch.
  9. Heat heavy cream until just simmering, then slowly whisk into egg mixture.
  10. Return mixture to saucepan and cook until thickened. Cool completely.
  11. Spread custard over cooled cookies.
  12. Sprinkle a thin layer of sugar on top and caramelize with a kitchen torch just before serving.
