Description

A creamy, cheesy Southern-style spaghetti dish with tender chicken, spicy seasonings, and a rich tomato-cheese sauce baked to perfection.


Ingredients

  • 12 oz spaghetti
  • 2 cups cooked chicken breast, shredded
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional, for extra heat)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook spaghetti according to package directions until al dente. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add onion, bell pepper, and garlic, cooking until softened.
  4. Stir in diced tomatoes with green chilies, cream of chicken soup, sour cream, Cajun seasoning, paprika, cayenne, salt, and pepper. Mix until combined.
  5. Add shredded chicken and cooked spaghetti to the skillet mixture, tossing until coated.
  6. Transfer mixture into the prepared baking dish and top with 1 1/2 cups of cheddar cheese.
  7. Bake for 25–30 minutes, until hot and bubbly.
  8. Sprinkle with remaining cheese and bake for 5 more minutes until melted.
  9. Garnish with parsley and serve warm.

Notes

  • Rotisserie chicken works great for this recipe.
  • Adjust the spice level by increasing or reducing cayenne pepper.
