Description
Thick cauliflower steaks roasted until golden and tender, then topped with a rich layer of melted cheese for a savory, irresistible vegetarian main or side dish.
Ingredients
- 1 large head cauliflower
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley (for garnish)
- Optional: 1/2 teaspoon chili flakes
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Remove the outer leaves from the cauliflower and trim the stem, keeping the core intact.
- Slice the cauliflower vertically into 3/4 to 1-inch thick steaks.
- Place the steaks on the prepared baking sheet.
- Brush both sides of the cauliflower steaks with olive oil.
- In a small bowl, mix garlic powder, paprika, salt, and black pepper, then sprinkle evenly over the steaks.
- Roast in the oven for 20 minutes, carefully flipping halfway through.
- Remove from the oven and sprinkle mozzarella and Parmesan evenly on top.
- Return to the oven and bake for another 5–8 minutes until the cheese is melted and bubbly.
- Garnish with chopped parsley and optional chili flakes before serving.
Notes
- Cut steaks through the core to keep them intact while roasting.
- If some florets fall apart, roast them alongside the steaks—they taste just as good.
- You can substitute mozzarella with cheddar, provolone, or a cheese blend.
- For extra crispiness, broil for the last 1–2 minutes.
