Description

Thick cauliflower steaks roasted until golden and tender, then topped with a rich layer of melted cheese for a savory, irresistible vegetarian main or side dish.


Ingredients

  • 1 large head cauliflower
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (for garnish)
  • Optional: 1/2 teaspoon chili flakes


Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Remove the outer leaves from the cauliflower and trim the stem, keeping the core intact.
  3. Slice the cauliflower vertically into 3/4 to 1-inch thick steaks.
  4. Place the steaks on the prepared baking sheet.
  5. Brush both sides of the cauliflower steaks with olive oil.
  6. In a small bowl, mix garlic powder, paprika, salt, and black pepper, then sprinkle evenly over the steaks.
  7. Roast in the oven for 20 minutes, carefully flipping halfway through.
  8. Remove from the oven and sprinkle mozzarella and Parmesan evenly on top.
  9. Return to the oven and bake for another 5–8 minutes until the cheese is melted and bubbly.
  10. Garnish with chopped parsley and optional chili flakes before serving.

Notes

  • Cut steaks through the core to keep them intact while roasting.
  • If some florets fall apart, roast them alongside the steaks—they taste just as good.
  • You can substitute mozzarella with cheddar, provolone, or a cheese blend.
  • For extra crispiness, broil for the last 1–2 minutes.
