Ingredients
- 4 boneless, skinless chicken breasts (or thighs)
- 1 tbsp olive oil

- For the Jalapeño Peach Sauce:
- 2 fresh peaches, peeled and diced (or 1 1/2 cups frozen)
- 1 jalapeño, finely chopped (remove seeds for less heat)
- 2 tbsp honey or brown sugar
- 2 tbsp apple cider vinegar or balsamic vinegar
- 1/3 cup chicken broth
- 1 tsp Dijon mustard
- 1 tsp lemon juice
- 1 tbsp butter (for finishing)
- Fresh basil or cilantro, chopped (for garnish)
Instructions
- Prepare the Chicken: Pat chicken dry and season both sides with salt, pepper, garlic powder, and smoked paprika.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5–6 minutes per side, until golden brown and cooked through (internal temperature 165°F/74°C). Transfer to a plate and keep warm.
- Make the Jalapeño Peach Sauce: In the same skillet, add peaches, jalapeño, honey, vinegar, broth, Dijon mustard, and lemon juice. Stir and bring to a simmer.
- Cook for 6–8 minutes, stirring occasionally, until the peaches break down and the sauce thickens slightly. Use a fork to mash some of the peaches for a chunkier texture.
- Stir in butter for a glossy finish. Taste and adjust seasoning (add more honey for sweetness or vinegar for tang).
- Combine: Return chicken to the skillet, spooning the sauce over the top. Simmer for 1–2 minutes to let the flavors meld.
- Serve: Garnish with fresh basil or cilantro and serve hot over rice, quinoa, or mashed potatoes.
