Soft, fudgy lemon brownie bars bursting with zesty lemon flavor and topped with a tangy lemon glaze for a refreshing dessert twist.
Ingredients
- 1 cup unsalted butter, melted
- 1 1/2 cups granulated sugar
- 2 large eggs
- 2 tbsp lemon juice
- 1 tbsp lemon zest
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup powdered sugar (for glaze)
- 2–3 tbsp lemon juice (for glaze)
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a large bowl, whisk together melted butter and sugar until smooth.
- Add eggs, lemon juice, lemon zest, and vanilla extract. Mix until combined.
- In another bowl, whisk together flour, baking powder, and salt. Gradually fold into the wet mixture until just combined.
- Spread batter evenly in the prepared baking dish.
- Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool completely before glazing.
- For glaze: whisk powdered sugar with lemon juice until smooth. Spread over cooled bars.
- Cut into squares and serve.
Notes
- For extra tangy flavor, add more lemon zest to the batter.
- Chill bars for 30 minutes after glazing for easier slicing.
- Store in an airtight container in the fridge for up to 4 days.
