Description

Soft, fudgy lemon brownie bars bursting with zesty lemon flavor and topped with a tangy lemon glaze for a refreshing dessert twist.


Ingredients

  • 1 cup unsalted butter, melted
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup powdered sugar (for glaze)
  • 23 tbsp lemon juice (for glaze)


Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, whisk together melted butter and sugar until smooth.
  3. Add eggs, lemon juice, lemon zest, and vanilla extract. Mix until combined.
  4. In another bowl, whisk together flour, baking powder, and salt. Gradually fold into the wet mixture until just combined.
  5. Spread batter evenly in the prepared baking dish.
  6. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool completely before glazing.
  8. For glaze: whisk powdered sugar with lemon juice until smooth. Spread over cooled bars.
  9. Cut into squares and serve.

Notes

  • For extra tangy flavor, add more lemon zest to the batter.
  • Chill bars for 30 minutes after glazing for easier slicing.
  • Store in an airtight container in the fridge for up to 4 days.
