Ingredients

  • 1 cup heavy whipping cream
  • 8 oz mascarpone cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • Fresh berries, for garnish (optional)
  • Mint leaves, for garnish (optional)


Instructions

  1. In a mixing bowl, beat heavy whipping cream until stiff peaks form. Set aside.
  2. In another bowl, beat mascarpone cheese with powdered sugar until smooth and creamy.
  3. Add lemon juice, lemon zest, and vanilla extract to the mascarpone mixture. Mix until combined.
  4. Gently fold whipped cream into the lemon mascarpone mixture until fully incorporated and fluffy.
  5. Spoon cream into serving glasses or bowls and chill for at least 1 hour before serving.
  6. Garnish with fresh berries and mint leaves if desired.
