Description

Loaded Fiesta Potato Bowls are a hearty, flavorful dish inspired by Tex-Mex cuisine — featuring crispy potatoes topped with seasoned beef, creamy cheese sauce, tangy sour cream, and fresh toppings for the ultimate comfort meal.


Ingredients

  • 4 medium russet potatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 500g ground beef (or chicken)
  • 1 small onion, diced
  • 1 teaspoon taco seasoning
  • 1/4 cup water
  • 1 cup shredded cheddar cheese
  • 1/4 cup nacho cheese sauce (optional)
  • 1/2 cup sour cream
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1/4 cup jalapeño slices (optional)
  • Fresh cilantro for garnish


Instructions

  1. Preheat oven to 220°C (425°F). Line a baking sheet with parchment paper.
  2. Toss diced potatoes with olive oil, paprika, garlic powder, chili powder, salt, and pepper until evenly coated.
  3. Spread potatoes in a single layer on the baking sheet and roast for 25–30 minutes, turning halfway, until golden and crispy.
  4. Meanwhile, heat a skillet over medium heat and cook ground beef with diced onion until browned. Drain any excess fat.
  5. Add taco seasoning and water to the beef and simmer for 2–3 minutes until the sauce thickens. Remove from heat.
  6. To assemble: divide crispy potatoes into bowls and top with taco-seasoned beef.
  7. Drizzle with nacho cheese sauce or sprinkle shredded cheddar on top (let it melt slightly).
  8. Add sour cream, diced tomatoes, green onions, jalapeños, and cilantro as desired.
  9. Serve hot and enjoy your loaded fiesta potato bowl!
