Ingredients

  • 4 large carrots, peeled and sliced into 1/2-inch sticks
  • 2 crisp apples (such as Honeycrisp or Fuji), cored and cut into wedges
  • 2 tablespoons olive oil
  • 2 tablespoons pure maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh thyme leaves (optional)


Instructions

  1. Preheat oven to 200°C (400°F) and line a large baking sheet with parchment paper.
  2. In a large bowl, whisk together olive oil, maple syrup, Dijon mustard, apple cider vinegar, cinnamon, salt, and pepper.
  3. Add the sliced carrots and apple wedges to the bowl and toss until evenly coated.
  4. Spread the mixture out in a single layer on the prepared baking sheet.
  5. Roast for 25–30 minutes, tossing halfway through, until carrots are tender and the apples are caramelized around the edges.
  6. Remove from the oven and sprinkle with fresh thyme before serving.
