This Maple Glazed Apple and Brie Stuffed Chicken is a sweet, savory, and absolutely irresistible dish. Juicy chicken breasts are filled with melty Brie and caramelized apples, then coated in a glossy maple Dijon glaze. It’s elegant enough for entertaining but easy enough for a weeknight dinner.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- For the Filling:
- 1 large apple, thinly sliced (Honeycrisp or Fuji recommended)
- 1 tbsp butter
- 1 tbsp brown sugar
- 1/4 tsp cinnamon
- 4–6 oz Brie cheese, sliced
- For the Maple Glaze:
- 1/4 cup pure maple syrup
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1 clove garlic, minced
- 1/4 tsp salt
- 1 tbsp butter (to finish)
- Fresh thyme or parsley, for garnish
Instructions
- Prepare the Chicken: Use a sharp knife to cut a pocket into the side of each chicken breast. Season the outside with salt, pepper, and garlic powder.
- Cook the Apples: In a skillet, melt butter over medium heat. Add sliced apples, brown sugar, and cinnamon. Cook 3–5 minutes until softened and lightly caramelized. Let cool slightly.
- Stuff the Chicken: Add a few slices of Brie and a spoonful of caramelized apples into each chicken breast. Secure with toothpicks if needed.
- Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Sear chicken 3–4 minutes per side until golden. Remove and set aside.
- Make the Maple Glaze: In the same skillet, whisk together maple syrup, Dijon, apple cider vinegar, garlic, and salt. Simmer 2–3 minutes.
- Stir in butter for a glossy finish.
- Finish Cooking: Return chicken to the skillet, spooning glaze over the top. Reduce heat to medium, cover, and cook 10–12 minutes or until chicken is cooked through (165°F/74°C).
- Serve: Spoon extra glaze over chicken and garnish with fresh thyme or parsley.

- Use pears instead of apples for a delicious variation.
- To avoid leaks, freeze Brie slices for 10 minutes before stuffing.
- Excellent served with roasted vegetables, wild rice, or mashed potatoes.
