Ingredients
- 4 large flour tortillas
- 2 cups fresh spinach, roughly chopped
- 1/2 cup crumbled feta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup sun-dried tomatoes, chopped
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh parsley
Instructions
- Heat 1 tablespoon olive oil in a skillet over medium heat.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Add chopped spinach and cook until wilted, about 2 minutes.
- Stir in sun-dried tomatoes, oregano, and black pepper, then remove from heat.
- Lay tortillas flat and evenly distribute the spinach mixture over half of each tortilla.
- Sprinkle feta and mozzarella cheese on top of the spinach mixture.
- Fold each tortilla in half to form a quesadilla.
- Heat remaining olive oil in the skillet over medium heat.
- Cook quesadillas for 2–3 minutes per side until golden brown and the cheese is melted.
- Slice into wedges, garnish with parsley, and serve warm.
Notes
- Whole wheat tortillas can be used for a healthier option.
- Add olives or roasted red peppers for extra Mediterranean flavor.
- Serve with tzatziki or a yogurt dip for added freshness.
