Crispy golden quesadillas filled with sautéed spinach, tangy feta cheese, and Mediterranean herbs for a flavorful vegetarian twist on a classic favorite.


Ingredients

  • 4 large flour tortillas
  • 2 cups fresh spinach, roughly chopped
  • 1/2 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley


Instructions

  1. Heat 1 tablespoon olive oil in a skillet over medium heat.
  2. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add chopped spinach and cook until wilted, about 2 minutes.
  4. Stir in sun-dried tomatoes, oregano, and black pepper, then remove from heat.
  5. Lay tortillas flat and evenly distribute the spinach mixture over half of each tortilla.
  6. Sprinkle feta and mozzarella cheese on top of the spinach mixture.
  7. Fold each tortilla in half to form a quesadilla.
  8. Heat remaining olive oil in the skillet over medium heat.
  9. Cook quesadillas for 2–3 minutes per side until golden brown and the cheese is melted.
  10. Slice into wedges, garnish with parsley, and serve warm.
