Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cans (400g each) whole peeled tomatoes
- 1 cup vegetable or chicken broth
- 1 tablespoon tomato paste
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon sugar (to balance acidity)
- 1/2 cup heavy cream or milk (optional, for creaminess)
- Fresh basil or croutons for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and cook until soft and translucent, about 5 minutes.
- Stir in garlic and cook for another minute until fragrant.
- Add canned tomatoes with their juices, broth, tomato paste, basil, thyme, salt, pepper, and sugar.
- Bring to a simmer and cook uncovered for 20–25 minutes, stirring occasionally.
- Use an immersion blender (or transfer to a blender carefully) to puree until smooth.
- Stir in cream or milk if desired, and adjust seasoning to taste.
- Serve hot, garnished with fresh basil leaves or crunchy croutons.
