Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cans (400g each) whole peeled tomatoes
  • 1 cup vegetable or chicken broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon sugar (to balance acidity)
  • 1/2 cup heavy cream or milk (optional, for creaminess)
  • Fresh basil or croutons for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until soft and translucent, about 5 minutes.
  3. Stir in garlic and cook for another minute until fragrant.
  4. Add canned tomatoes with their juices, broth, tomato paste, basil, thyme, salt, pepper, and sugar.
  5. Bring to a simmer and cook uncovered for 20–25 minutes, stirring occasionally.
  6. Use an immersion blender (or transfer to a blender carefully) to puree until smooth.
  7. Stir in cream or milk if desired, and adjust seasoning to taste.
  8. Serve hot, garnished with fresh basil leaves or crunchy croutons.
