A beautifully simple holiday dessert featuring a layer of tart cranberries topped with a sweet, buttery cake-like crust—festive, vibrant, and perfect for gatherings.
Ingredients
- 2 cups fresh cranberries
- 1/2 cup chopped walnuts or pecans
- 1 cup granulated sugar, divided
- 2 large eggs
- 3/4 cup unsalted butter, melted
- 1 cup all-purpose flour
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C) and grease a 9-inch pie dish.
- Spread the cranberries evenly over the bottom of the dish.
- Sprinkle nuts over the cranberries, followed by 1/2 cup of the sugar.
- In a mixing bowl, whisk together the eggs, remaining 1/2 cup sugar, melted butter, vanilla, salt, and flour until smooth.
- Pour the batter evenly over the cranberry mixture.
- Bake for 40–45 minutes, or until the top is golden and set.
- Cool slightly before serving. Serve warm or at room temperature.
Notes
- Serve with whipped cream or vanilla ice cream for extra indulgence.
- Add orange zest to the batter for a citrusy twist.
- Can be made ahead and reheated gently before serving.
- Fresh cranberries work best, but frozen cranberries may be used without thawing.
