Description

Ingredients

  • 2 cups fresh cranberries
  • 1/2 cup chopped walnuts or pecans
  • 1 cup granulated sugar, divided
  • 2 large eggs
  • 3/4 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 1 tsp vanilla extract
  • 1/4 tsp salt


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch pie dish.
  2. Spread the cranberries evenly over the bottom of the dish.
  3. Sprinkle nuts over the cranberries, followed by 1/2 cup of the sugar.
  4. In a mixing bowl, whisk together the eggs, remaining 1/2 cup sugar, melted butter, vanilla, salt, and flour until smooth.
  5. Pour the batter evenly over the cranberry mixture.
  6. Bake for 40–45 minutes, or until the top is golden and set.
  7. Cool slightly before serving. Serve warm or at room temperature.
